Banana Nut Bread

Bake Time: 60 Minutes
Yields: 1 Loaf


Ingredients:

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
1 cup sugar (I substituted with Truvia Baking Blend)
2 eggs
4 to 5 very ripe bananas, mashed
1/2 cup chopped nuts (walnuts or pecans)--I used pecans
1/2 cup raisins or cranberries (optional)--I omitted

Directions:

Preheat oven to 350 degrees F.

Grease loaf pan.

Mix all ingredients together well.

Pour into prepared loaf pan.

Bake for 1 hour.

Apple Nut Bread



Bake Time: 90 minutes                 Yields:   2 loaves


Ingredients-

1/2 cup vegetable oil
3 eggs
2 cups sugar (I substituted with Truvia Baking Blend instead)
3 cups flour
1 cup walnuts (I substituted with pecans)
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
3 cups chopped apples or applesauce (I opted to use applesauce)

Directions-

Preheat oven to 350 degrees F.

Lightly grease and flour two 8x4 loaf pans.

Mix the first three ingredients well; add remaining ingredients. Pour into the prepared loaf pans.

Bake for 90 minutes. 

*Note: Mine turned out a little darker than I would like. Next time, I will cut time by approximately 10 minutes or so.
